INGREDIENTS :
- 1- 3lbs chicken
- 2 tablespoon curry powder
- onion, thyme, garlic, pepper (scotch bonnet) , black pepper.
- salt to taste
METHOD:
- Clean, skin,and cut chicken in small pieces
- Season with curry powder, onion, thyme, garlic, pepper, salt and let marinate for aleast 1 hr.
- In a pot pour about 3 tablespoon of oil.
- Add chicken and let cook until done.
- Serve over white rice
INGREDIENTS:
- 3cups cornmeal
- ¾ cup all purpose flour
- 2 ¼ cups brown sugar
- 5 cups coconut milk
- ½ tsp. mixed spice or cinnamon
- 1½ tsp salt
- 1½ tsp grated nutmeg
- ½ cup raisins
- ½ cup of the shredded coconut
METHOD:
- Sift together flour and cornmeal.
- Blend together sugar, salt, nutmeg, mixed spice (cinnamon) and coconut milk.
- Add to cornmeal mixture.
- Pour into a greased pan.
- Add Raisins.
- Sprinkle shredded coconut on top.
- Add butter or margarine.
- Bake in a moderately-hot oven 350F for ¼ hour or until set.
- Combine and pour custard mixture on top of pudding.
- Bake for a further ½ to ¾ hour or until set.
- Cool and serve.
*Custard Mixture* -
½ cup coconut milk

4 tbsps granulated sugar

Dash of cinnamon
-
Dash of vanilla
