2 lbs ox tail chopped
1 onions minced
2 stalks escallion (green onion) chopped
2 cloves garlic minced
2 tbsp soy sauce
¼ tsp salt
¼ tsp black pepper
1 spring of thyme leaves
1 can broad beans (butter beans)
2 tbsp vegetable oil
½ cup carrots chopped (optional)
2 tomatoes, chopped (optional)
2 cups of water

Preparation
1. Season ox tail with seasoning and allow to marinate for at least 1 hour. (Salt, Black Pepper and Soy Sauce)
2. Brown meat on both sides in a large pot.
3. Add water, carrots, tomatoes, onions, garlic, escallion, thyme and cook until meat and carrots are tender.
